Chicken Salad Lettuce Wraps

1/2 can of Kirkland Canned Chicken Breast
1 Tbsp Best Foods Light Mayo
Onion Salt (to my liking)
3 Iceberg Lettuce Leaves

Calories: 265
Carbs: 2 grams

Options: I would normally add some chopped celery to add a crunch but I was out...but this wouldn't add many calories or carbs
Also, if you can afford the calories you could also add 1 Tbsp of sliced almonds (52 cal. 1 g of Carbs) or some grapes would be yummy too!

Cottage Cheese & Fruit




1 cup non fat cottage cheese
1/3 small can of mandarin oranges (in light syrup)
1 Tbsp of Sliced Almonds

Calories: 250
Carbs: 25 g

I actually usually eat this breakfast with Cantaloupe but I also love Pineapple or Peaches as well.

Egg & Sausage Bagel Sandwich



1 Bubba's Skinny Bagel
1 Tyson Lean Sausage Patty
2 Fried Egg Whites (Fried with just pan spray)

Calories: 285
Carbs: 20.7 g (almost all come from the skinny bagel)
If you can afford the calories, you could add a slice of cheddar cheese (add 60 calories and 2 g of carbs)

Applebee's Dijon Chicken with Portabello Mushrooms

Found this copycat on SparkRecipes after I tried this dish at Applebee's (Which is no longer there)

Pumpkin Cookies



Love these cookies.  I add semi-sweet chocolate chips for my chocolate fix.  I make a batch and freeze them then when I microwave them they're warm, almost like fresh out of the oven! YUM

I also love to make them into mini muffins.

Calories: 42 per cookie (from recipe) 60 with added chocolate chips

Cafe Zupas Yucatan Tortilla Chicken Soup (Slow Cooker)




2 frozen chicken breasts
1 medium onion, diced
1 can black beans, drained and rinsed
1 c. uncooked brown rice
8 c. chicken broth
2 cans diced tomatoes with green chiles (mild)
1/3 cup lime juice (uses 1 lime)
1 c. frozen sweet corn

Place chicken, onion, beans, rice, chicken broth and tomatoes in slow cooker.  Cook on low for 6-8 hours.  1/2 hour before serving shred chicken with a fork and add corn.  
Top with a scoop of guacamole, tortilla chips and lime wedge.

Calories: 150 (without avocado or tortilla chips)
